4 servings (1 serving = 4 oz.)
Prep time: 20 mints
Ingredients
¼ tsp. ground black pepper
1 tsp. oregano, dried
1 lb. skinless, boneless chicken breast
2 tbsp. unsalted butter
1 tsp. chopped fresh basil
¼ cup water
¼ cup low Sodium; chicken broth
2 minced cloves garlic
1 tbsp. lemon juice
Directions
In a small bowl, combine the ground black pepper and oregano. Rub the mixture on chicken.
In a medium-size skillet on medium flame, melt the butter. In the melting butter, brown the chicken and then switch the chicken to a slow cooker.
In the skillet, place the water, chicken broth, garlic, and lemon juice and garlic. Get it to a boil, so the browned pieces are loosened from the skillet. Place over the chicken.
Cover schedule the slow cooker for 21⁄2 hours on maximum or 5 hours on low.
Combine the basil and baste the chicken. Cover and cook for a further 15-30 minutes or till the chicken is tender.
